Summary:Green leafy vegetables have long been recognized as the cheapest and most abundant potential sources of protein because of their ability to synthesis amino acids from a wide range of virtually unlimited and readily available primary materials. Knowing the biochemical profiling is important for the consumption leafy vegetables. In this study, Analysis of proximate composition and mineral nutrients of two leafy vegetables Talinum triangulare and Boerhavia diffusa was carried out using standard method of food analysis. Association of official of analytical chemists A.O.A.C., (1984&1995). Mineral analysis of samples was also determined using AAS (Atomic Absorption Spectroscopy). The result of proximate analysis and mineral composition are included in this dissertation.
